
One of the most famous meals in Paris, France. This recipe is SUPER delicious and full of vitamins, minerals and healthy fiber.

NOTE: To serve more people just increase as needed!
Ingredients:
6 cloves of garlic (thinly sliced)
2 yellow onions (sliced)
1 large eggplant (sliced into bite size)
1 red capsicum (sliced into bite-size pieces)
1 green zucchini (sliced into bite size pieces)
1 yellow squash (sliced into bite size pieces)
15-20 cherry tomatoes (cut ½ of them in half and leave the others whole)
¼ cup of olive oil.
1 cup tomato sauce
Fresh thyme 3-5 tablespoons (to taste)
Fresh basil 10-15 leaves (to taste)
1 teaspoon of salt
½ teaspoon of black pepper
Instructions
- Turn heat to medium low.
- Add 1/3 of olive oil into pot.
- Add onions, garlic and red capsicum into pot.
- Add ½ teaspoon of salt into pot
- Stir pot every few minutes.
- Put frying pan on another burner and turn flame into medium low.
- Coat pan with 2-3 tablespoons of olive oil.
- Sauté eggplant in frying pan until lightly brown on both sides.
- Put eggplant into a bowl.
- Add cut tomatoes and tomato sauce to pot.
- Add 2-3 tablespoons of olive oil into frying pan again.
- Sauté green zucchini same as eggplant.
- Put finished zucchini into separate bowl
- Add 2-3 tablespoons of olive oil into frying pan again.
- Add yellow squash and sauté.
- Add eggplant, zucchini, squash, ½ teaspoon of salt and pepper.
- Add whole tomatoes and basil to pot and stir.
- Cover and allow to cook for 3 minutes.
